Yinyini Avilez’s History
Yinyini’s coffee journey started at the age of 13 on his family’s farm – not just a job, but a cherished legacy. He learned from his father, and now he shares the adventure with his wife and son.
Yinyini’s secret to exquisite quality begins with tall shade trees and regular pruning to promote soil nutrition, balance, and moisture retention. Meticulous cleaning, with a dash of organic fertilizers like chicken manure provide extra vitality.
In Yinyini’s world, coffee farming transcends the realm of mere occupation. He is a true community collaborator, and he generously shares his wealth of sustainable farming wisdom with fellow producers. Together, they breathe life into the livelihoods of many within their coffee-centric community.
What Yinyini treasures most about being a coffee farmer isn’t just the financial returns but the profound joy of providing employment opportunities. He also loves pushing the boundaries of innovation by experimenting with new coffee processes and even working one-on-one with coffee roasters by customizing micro-lots for them.
Yinyini personally indulges in about 6 cups of coffee per day savoring the essence of the steaming cups served black or with milk and panela. When he isn’t producing or drinking coffee,
Yinyini holds family time dear and relishes soccer matches with friends in town. Yinyini used to be the star player on a soccer team in a league specifically for coffee producers.
Processing
Yinyini employs a precise coffee selection process, eliminating under-ripe and over-ripe cherries. Following this, a hydrodynamic separation technique removes lower-density floaters. Ripe cherries are then sealed in anaerobic grainpro bags for fermentation before undergoing a meticulous drying process on raised beds.
This process involves an initial sun drying phase, followed by strategic shading to prevent direct sunlight and excessive heat exposure. This meticulously controlled sequence ensures the coffee’s exceptional quality and unique flavor development.
